In this video, I teach you how I like my spaghetti sauce, which is thick and chunky with a slight tartness to it. The tartness makes me think of freshness, whereas, salty makes me think canned. I am dumbfounded as to what I forgot in this recipe, for me it's an essential part to any pasta sauce and I didn't realize it until two days after making it. It was still good enough I didn't even notice it as I was eating it. You're going to have to watch the video to see what it is. I also show you how I go about formulating a recipe. Spaghetti sauce is one of my oldest adult cooking adventures but I have never taken the time to write down the recipe for it. I also show you how to formulate a recipe from scratch show you how to formulate a recipe from scratch. Spaghetti sauce is one of my oldest recipe in adult cooking and I have never taken the time to write down the recipe. Remember, it's always better to add too little rather than too much, you can always add more but you can't take too much out. This turned out very well, (with the exception of the forgotten ingredient), I hope you enjoy the video!

We're making a great cold spaghetti salad that is so easy and at the same time so good. This is a great summer party salad but just as good all year long. A great cooking experience for the beginning cook, if you can boil spaghetti you can make this salad. It doesn't get much easier than that. Come on, and follow along!

In this video, I show you how to make Beef Stroganoff from start to finish, it's really a fairly simple process. If you can make gravy, you can make beef stroganoff. I hope you enjoy the video! Most people I know love good fried chicken (me included). In this video, I show you how to go about it from start to finish. Keep in mind that cook times in the video do not accurately reflect actual time as having you sitting and watching nothing but chicken frying does not accomplish anything other than the passage of time. This is a great recipe but good fried chicken as I not in the video can be made by spicing your chicken, dredging in flour then into the skillet. Great fried chicken is not that difficult. The larger the pieces the longer they will need to cook. I hope you enjoy the video!

In this video, I show you how to make the first gravy I learned to make as a teenager. It's my belief that if you can learn to make this one simple gravy you can use the same basic techniques to make any kind of gravy and many different thickened sauces. This gravy is made with only four basic ingredients, a sharp knife, a skillet, and a slotted spatula, then salt and pepper to taste. In this video, I make a couple out of this world good pizza burgers. It's not that hard and can be easily replicated using a stove and oven for my beginning cooks out there, in fact, in doing some recipe research I made this same basic recipe in a skillet then finished it in the oven. One change that made a huge difference though was the use of 50/50 ground chuck/Italian sausage, that really kicked the flavor up a notch. Give this recipe a try, it's not too expensive and use your extra mushrooms to make spaghetti sauce or brown mushroom gravy, I'll put card links in the video.

It's the Sunday after Thanksgiving and it's also what I call "Use It, Freeze It, or Toss It Day", meaning this is the last day for Thanksgiving turkey leftovers to be in the refrigerator and you have to do one of or a combination of the three options stated. In this video, I show you how I go about making that last turkey sandwich prior to freezing the remaining turkey that probably won't be seen again until January or February when I use them as an ingredient in another dish. This recipe is a family favorite, we never had a name for it other than Smoked Sausage, Potatoes, and Green Beans but as I got to thinking about this video I got to wondering if it would be considered a soup or a stew. After doing a little internet research to find out what the difference between a soup and a stew is, I have determined it to be a stew, hence the name "Smoked Sausage Stew". This is not real fancy cooking but it's darned good comfort food. I hope you enjoy the video.

In this video, I show you how I go about making one of my favorite Christmas cookies, M&M cookies ara a great variant of the classic chocolate chip cookie. In my recipe, I make a couple personal changes that I note, the use of whole wheat flour and "Splenda" as the generic term for sucralose artificial sweetener. For the last few months, I've been working towards brewing a drinkable beer using only the wild yeasts found on a section of a sugar maple log which was cut from my neighbor's tree in the summer of 2018 and has remained in my firewood pile since.
This was all done in the hopes of creating my own American Kveik-like or American farmhouse yeast culture. For that reason, I designed a regimen to treat this log and the yeast on it as close to how the Norse treat their Kveik yeasts as possible, including the pitching of the log/yeast at high fermentation temperatures.
I cleaned it up and began using it in a series of beers, the first, only to see what would grow. It grew alright but the beer was terrible and undrinkable.
Log Beers II & III were designed with and along with a drying and freezing of the yeast slurries and the log with the intent of running the bacteria out of the log and along with them the bad flavors associated with them.
This "Log Beer IV" is the culmination of my discovery and cleanup process.

Yes, it really has been 20 years since I last brewed a beer but some things aren't that hard to pick up again once you've learned them once. This is the beginning video in a new beer brewing series I intend to make and I pretty much started near the extream end of where many brewers who stick with the hobby end up short of going professional.

In this video, I give a good overview of a typical all-grain brew day with a little bonus thrown in at the end. I brew a beer in the Extra Special Bitter, ESB, or Strong Bitter style. Don't let the name fool you, ESBs are a step below India Pale Ales in the bitterness range.

In this video, I show you how I make Chuck's (me) version of pork fried rice. I only take a couple liberties from what I know to be traditional but I do try to stay close and the results were phenomenal. This is not the easiest recipe you will ever make, there are a lot of moving parts and once the pork is browned things move along pretty fast and when you're cooking on high heat things have to move quickly to prevent burning. This is not a recipe to walk away from the stove on. I don't want to make it sound too hard, you can do this. I hope you enjoy the video!

In this video, I use my homemade corned beef to make corned beef and cabbage. A little FYI, while doing my research, I found out corned beef with cabbage is not a traditional St. Patricks Day meal in Ireland, it's an American tradition. As you'll see, corned beef with cabbage is not all that difficult to make other than it is time-consuming. Even my beginner cooks should be able to handle this one with store bought corned beef.
