As I was preparing the seed list for my garden this year I ran across a few youtube videos on fermented hot sauces. Being the lover of peppers that I am I decided I was going to give fermenting a shot. I normally make salsa's and hot sauces but have never fermented them so this seems like an exciting challenge for me. I decided that it would be a good idea to document the whole thing, I figured I can learn a few things and hopefully teach a few things along the way.

So let's get right into it! This year I have decided to change a some things with my growing process, mostly the fact that 90% of my peppers will be all from seeds sown by me. I have a decent size garden so usually only a select few plants I grow are from seed. I tend to buy my peppers from the local nursery. The only reason I decided to change this is because I'm adding a few variety's that my local nursery doesn't tend to carry, and I just got this really cool new LED grow light so I wanted to be fancy and have it all set up next to my work station.

2.) Bhut Jolokia (Ghost Pepper) (855,000 - 1,050,000 Scoville)
3.) Habanero (100,000 - 350,000 Scoville)

5.) Slim Red Cayenne (30,000 - 50,000 Scoville)
6.) Jalapeno M (3,500 - 8,000 Scoville)
7.) Hungarian Wax (2,500 - 8,000 Scoville)
8.) Ancho (1,000 - 1,500 Scoville)
9.) Anaheim (500 - 2,500 Scoville)
10.) Multiple varieties of Bell Peppers
It may not be the most impressive list but it is what I tend to cook with most of the time. Now that we have the seed list out of the way let's get down to planting. Here is the first video in what I'm hoping to keep down to 3 or 4 parts at the most. I hate watching 20 videos on one subject so I'm gonna attempt to combine different stages into each video. This first video will cover how I prepare my seeds and what I use to start them in. I'll go over a few of my additives for transplanting into soil later on and also cover my fancy new growing light.
